DESCRIPTION: The fresh summer truffle (tuber aestivum vitt.) also known as the Truffle name Scorzone is one of the many varieties of edible truffles. Its appearance is very characteristic as it has a thick and irregular rind (also called peridium). The color of the rind ranges from very dark brown to deep black. Inside it has a glebe whose color ranges from white to ocher and hazelnut depending on the level of ripeness and the territory of origin.
HARVEST: In Umbria the summer truffle harvest period is from 1 May to 31 August.
PACKAGING AND SHIPPING: We ship the fresh summer truffles in refrigerated polystyrene cartons to guarantee the best preservation of the product during transport. (Free recipe book)
STORAGE: Fresh truffles should be stored in the refrigerator 0°/+4°C wrapped one by one in absorbent paper and placed in a plastic or glass container, for up to a maximum of 5 days.
CONSUMPTION METHOD: Fresh truffles can be consumed in various ways. It can be sliced directly onto your favorite dishes, or grated to prepare a sauce to flavor your creations.
OBSERVATIONS: The fresh truffle is sold already washed, despite this, we recommend washing and/or brushing it carefully before use. The presence of white spots on the peel is completely normal and is easily removable by washing. Each piece is carefully selected by our expert operators.
Size: Truffles can be whole and/or split, this absolutely does not preclude the quality of the product, but rather shows the degree of ripeness of the truffle.
The origin of the truffle can vary based on availability, from Umbria to other regions of Italy.
