Choose
Choose the truffle for your dish
Fresh, sauce, or condiment? The choice starts with the result you want to bring to the table.

Start with the dish, then choose the product
A crostino to prepare in just a few minutes and a dinner dedicated to truffles call for different solutions. Before comparing jars, ask yourself how much time you have, how many people you will be serving, and what role you want the truffle to play. Should it be the star or just a hint?
A convenient product does not make the dish any less carefully prepared. It allows you to focus on the cooking, texture, and the moment you serve it. The best choice is the one you can use well, not necessarily the most demanding one.
Three different ways to serve it
Fresh is the experience of the raw ingredient, with its seasonality and perishability. It requires care in selection and storage.
The sauce is a recipe: it may contain mushrooms, cheese, butter, or other ingredients in addition to truffles. Consider the whole composition and the usage instructions.
The seasoning is used to finish or enhance flavor according to its formulation. It is not automatically portioned like a sauce.
Consistency matters: for a crostino, look for something that spreads easily; for pasta, a preparation that can bind with the seasoning; for a finishing touch, a product suitable for adding the desired aroma.
Read the label more mindfully
Check the name, ingredients, specified truffle species, percentages, and allergens. Two packages with a similar appearance may contain very different recipes. The format tells you how much product you are buying, not how much will be needed for each serving.
Do not assess everything based on a single number. A truffle percentage should be considered together with the recipe, the presence of other ingredients, and the intended use. For storage and dosage, the product information sheet and label remain the specific reference.
Three occasions, three criteria

First tasting: prioritize versatility and ease of pairing, so you can try the same product in different preparations.
Quick dinner: choose based on the steps you want to reduce. A ready-made base can help you complete pasta, eggs, or crostini.
Special occasion: look for a profile that complements the menu and carefully plan the sequence of courses.
How much to buy
Start with the product’s serving sizes and instructions, then consider when you will reuse it. A larger package makes sense if the expected consumption is compatible with the instructions after opening. The right size prevents leftovers that are difficult to manage.
If you are trying a new flavor, a smaller size allows you to get to know the product. If you are preparing several courses, plan in advance where to include it: repeating it everywhere is not essential for creating a truffle menu.
An easy choice to remember
Don't have much time? Consider a ready-made preparation and read how to use it.
Want to get to know a variety? Find out about the fresh product available during its season.
Just want to finish the dish? Consider a dressing to use according to the label.
Are there any intolerances or allergies? Check every package: the name “truffle” does not describe all the ingredients.
