Take care of it
Clean, preserve, and respect the truffle
From fresh to opened jars: different actions for different products.

Fresh and processed follow different rules
The first distinction is between fresh truffles and packaged products. A freshly purchased truffle continues to change; a sauce is a preparation with its own ingredients and storage conditions. Do not automatically apply instructions for one to the other.
When you buy fresh truffles, plan when you will serve them and ask the seller for instructions. For a packaged product, read both the instructions for the unopened package and those that apply after opening.
Keep fresh
In general, fresh truffles should be kept in the refrigerator, in a sealed container with paper towels that should be checked and replaced when damp. Use it as soon as possible: don’t wait for it to lose its aroma before deciding on the recipe.
Don’t rely on the same shelf life for every truffle. Species, initial condition, and storage conditions matter. If you notice any changes, ask the supplier before consuming it; an intense aroma is not a reason to ignore unusual conditions.
Clean shortly before use
Gently remove the soil with a tool suitable for the truffle’s surface, without digging or scrubbing forcefully. Cleaning must be thorough and respectful of the raw ingredient. Avoid prolonged soaking and dry thoroughly when using water, according to the instructions you received.
Prepare only what is needed for the meal and keep the work surface and utensils clean. More delicate surfaces require greater care: do not apply the same force to truffles with different skins.
After opening the jar
Follow the temperature and time instructions on the label. Use a clean utensil, close tightly, and store the product as indicated. Writing down the opening date can help you plan when to use it.
Do not infer the shelf life from the presence of oil or butter. An opened sauce is not a homemade preserve that can be kept longer at will: adding ingredients or changing the container does not replace the manufacturer’s instructions. Plan a second preparation while the product is still within the recommended time frame.
Heat is part of the recipe
For fresh products, the species and preparation determine how they should be used. For sauces and dressings, the formulation can affect how they behave in cooking. Read before heating to avoid treating products that are not the same in the same way.
When a recipe calls for finishing on the plate, prepare everything else first. When it calls for gentle heating, avoid turning it into a long boil. The product-specific guide takes precedence over a general rule.
Before putting everything away
Packaging: was it closed properly again?
Label: did you check the temperature and time after opening?
Plan: do you know when you will reuse it?
Question: ask the manufacturer for information, without relying solely on the product’s appearance.
